with Ginger & Pandan

You’ll Need
︎ 600g sweet potato, peeled and cut into 2-3cm chunks
︎ Thumb-sized piece of ginger, washed and smashed
︎ 4 pandan leaves, washed and tied into a knot
︎ 3 Tbsp gula Melaka (or to taste)
︎ 1 ½ litres water
Let’s Cook!
1. Place all the ingredients into a saucepan with enough water to cover the sweet potato.
2. Boil on high heat for 7-10 minutes. Lower the heat and simmer until the sweet potato is tender, around 20 minutes.
3. Taste – add more gula Melaka if you would like it sweeter.
